2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (packed in oil)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces pasta (fettuccine or penne work great)

Fresh basil leaves for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Once the oil is hot, add the chicken to the skillet. Cook for 6-7 minutes on each side until the chicken is cooked through and has a golden crust. Remove from skillet and let rest for 5 minutes before slicing.

      Create the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and cook for another minute. Pour in the chicken broth and bring to a simmer.

        Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese, mixing until the cheese melts and the sauce becomes creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Season with additional salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the sauce until well coated. Slice the seared chicken and arrange it on top of the pasta.
