2 sheets of puff pastry, thawed

2 large apples (such as Honeycrisp or Granny Smith), peeled, cored, and thinly sliced

1 cup Brie cheese, removed from the rind and cut into small pieces

1/4 cup brown sugar

1/4 cup unsalted butter

1 teaspoon cinnamon

1 tablespoon lemon juice

1 egg, beaten (for egg wash)

Fresh thyme leaves, for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Apples: In a mixing bowl, toss the thin apple slices with lemon juice, cinnamon, and brown sugar. Let them sit for 10 minutes to absorb the flavors.

      Melt the Butter: In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and mix in the remaining brown sugar until combined.

        Assemble the Tarts: Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into four equal squares. Place them on the prepared baking sheet.

          Create the Apple Layer: Arrange the sliced apples in a circle on each puff pastry square, overlapping them slightly. Drizzle the melted butter and brown sugar mixture evenly over the apples.
