1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 ¼ cup granulated sugar (divided)

4 large eggs

1 cup sour cream

1 cup heavy cream

1 tablespoon instant coffee granules

1 tablespoon espresso powder

1 teaspoon vanilla extract

¼ teaspoon salt

1 cup semisweet chocolate chips (for optional topping)

Whipped cream (for garnish)

Instructions
 

Preheat the oven to 325°F (160°C).

    Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar until smooth and fluffy.

        Add the eggs: One at a time, beat in the eggs, mixing just until combined after each addition.

          Combine the other ingredients: Add the sour cream, heavy cream, instant coffee granules, espresso powder, vanilla extract, and salt. Mix until everything is well blended and smooth.

            Pour the filling over the crust: Carefully pour the cheesecake batter over the cooled crust in the springform pan.

              Bake the cheesecake: Place the pan on a baking sheet and bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.

                Cool and chill: Once baked, turn off the oven and crack the oven door slightly. Let the cheesecake cool in the oven for 1 hour to reduce cracks. Transfer to the fridge and chill for at least 4 hours or preferably overnight.

                  Serve: When ready to serve, melt the chocolate chips in a microwave-safe bowl until smooth. Drizzle over the cheesecake and garnish with whipped cream if desired.
