Ingredients

2 slices of thick sourdough bread

1 tablespoon unsalted butter, softened

100g Brie cheese, sliced

1/3 cup fresh blackberries

1 tablespoon honey

A sprinkle of fresh thyme leaves (optional)

Pinch of salt

Instructions

Begin by spreading the softened butter evenly on one side of each slice of sourdough bread. This will help achieve a perfectly golden crust.

Place one slice of bread, butter-side down, onto a skillet over medium heat.

Layer the sliced Brie cheese on top of the bread in the skillet, ensuring the cheese covers the entire slice.

In a small bowl, combine the blackberries and honey. Gently mash a few blackberries with a fork to create a chunky spread.

Spread the blackberry-honey mixture evenly over the Brie cheese in the skillet. If desired, sprinkle fresh thyme leaves and a pinch of salt on top for added flavor.

Top with the second slice of bread, butter-side up.

Cook for about 3-4 minutes or until the bottom slice is golden brown and the cheese begins to melt.

Carefully flip the sandwich using a spatula, and cook the other side for another 3-4 minutes, pressing down gently to ensure even grilling.

Once both sides are golden brown and the cheese is melted, remove the sandwich from the skillet and let it rest for a minute before cutting it in half.

Prep Time: 5 minutes | Total Time: 15 minutes | Servings: 1 sandwich
