1 lb ground beef (or ground turkey for a lighter option)

1 small onion, finely chopped

1 small red bell pepper, finely chopped

2 cloves garlic, minced

1 cup ketchup

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon brown sugar

1 teaspoon smoked paprika

1/2 teaspoon ground black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

Salt, to taste

4 hamburger buns (preferably brioche for extra flavor)

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 4-5 minutes until they become soft and translucent.

    Brown the Meat: Push the vegetables to the side of the skillet and add the ground beef (or turkey). Cook until browned, breaking it up with a spoon as it cooks, about 6-8 minutes. Drain excess fat if necessary.

      Add the Garlic: Stir the minced garlic into the meat mixture and cook for an additional 1-2 minutes until fragrant.

        Combine the Sauce Ingredients: In a bowl, mix together ketchup, Worcestershire sauce, Dijon mustard, brown sugar, smoked paprika, black pepper, cayenne pepper, and salt until well combined. Pour this mixture over the meat and veg in the skillet.

          Simmer: Reduce heat to low and let the mixture simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and everything is heated through.

            Toast the Buns (optional): While the sloppy joe mixture simmers, preheat your oven to 350°F (175°C). Slice the buns in half and place them cut side up on a baking sheet. Toast in the oven for about 5 minutes until slightly crispy.
