1 lb ground beef

1 onion, chopped

2 cloves garlic, minced

2 cups sliced potatoes (about 3 medium potatoes)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

2 cups shredded cheddar cheese

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried thyme

½ tsp oregano

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Increase the heat to medium-high and add the ground beef, cooking until it’s browned and cooked through (about 5-7 minutes). Drain any excess fat.

      Combine Ingredients: In a large mixing bowl, combine the browned beef, sliced potatoes, frozen mixed vegetables, cream of mushroom soup, and beef broth. Season with salt, pepper, paprika, thyme, and oregano. Mix well until all ingredients are evenly coated.

        Layer in Casserole Dish: Grease a 9x13-inch baking dish with non-stick spray or a little olive oil. Pour half of the beef and potato mixture into the dish. Sprinkle 1 cup of shredded cheddar cheese evenly over this layer. Pour the remaining beef mixture on top, smoothing it out.

          Add Cheese Topping: Top the casserole with the remaining cup of shredded cheddar cheese.

            Bake the Casserole: Cover the baking dish with aluminum foil (shiny side down) and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the potatoes are tender.

              Cool and Serve: Remove from the oven and let the casserole cool for about 10 minutes before serving. This allows the flavors to meld together beautifully.
