1 lb ground beef

1 large onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

2 cups frozen mixed vegetables (peas, carrots, and beans)

1 cup uncooked elbow macaroni

2 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

Salt and black pepper to taste

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.

      Add Aromatics: Stir in the chopped onion and garlic. Cook until the onion becomes translucent, about 3-4 minutes.

        Combine Ingredients: In the skillet, add the diced tomatoes (with juice), kidney beans, corn, mixed vegetables, elbow macaroni, beef broth, Worcestershire sauce, Italian seasoning, salt, and black pepper. Stir thoroughly to combine all ingredients.

          Simmer: Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for about 10 minutes, stirring occasionally, until the macaroni starts to soften.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it evenly.
