2 tablespoons red curry paste

1 can (400ml) coconut milk

4 cups vegetable or chicken broth

200g rice noodles

1 tablespoon soy sauce

1 tablespoon fish sauce (or additional soy sauce for vegetarian)

1 teaspoon sugar

1 cup bean sprouts

1 cup sliced mushrooms (shiitake or button)

1 red bell pepper, sliced

1 cup baby spinach

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: sliced jalapeños or Thai basil for additional heat and flavor

Instructions
 

Base Preparation: In a large pot, heat a tablespoon of vegetable oil over medium heat. Add the red curry paste and sauté for about 1-2 minutes until fragrant.

    Add Liquids: Pour in the coconut milk and vegetable or chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

      Flavors Development: Add soy sauce, fish sauce, and sugar. Taste and adjust seasoning if necessary.
