1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup coconut milk

1/4 cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon red curry paste (adjust to taste)

1 tablespoon vegetable oil

1/2 cup chopped green onions

1/3 cup chopped peanuts (for garnish)

Fresh cilantro (for garnish)

Jasmine rice or rice noodles (for serving)

Instructions
 

Marinate Chicken: In a bowl, combine the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red curry paste. Whisk until smooth. Add the chicken pieces and toss to coat. Marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

    Cook Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken along with the marinade. Cook for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and the sauce is thickened.

      Prepare Rice/Noodles: While the chicken is cooking, prepare jasmine rice or rice noodles according to the package instructions.
