1 tablespoon coconut oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

4 cups vegetable broth

2 cans (13.5 oz each) coconut milk

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon brown sugar

8 oz rice noodles (or your choice of noodles)

1 cup baby spinach

1 cup bell peppers, sliced (mix of red and yellow)

1 cup sugar snap peas

Fresh cilantro, for garnish

Lime wedges, for serving

Sliced chili peppers, for garnish (optional)

Instructions
 

In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the red curry paste to the pot and stir for 1 minute to allow the flavors to meld.

        Pour in the vegetable broth and coconut milk, and stir well to combine. Bring the mixture to a gentle simmer.

          Add the soy sauce, lime juice, and brown sugar to the pot, stirring until the sugar has dissolved completely.

            Cook the rice noodles according to package instructions, then drain and set aside.

              Add the sliced bell peppers and sugar snap peas to the soup, and simmer for 3-4 minutes until the vegetables are tender but still crisp.

                Finally, stir in the baby spinach and cooked noodles, allowing the soup to simmer for an additional 2 minutes.

                  Taste and adjust seasoning, adding more lime juice or soy sauce if necessary.

                    Serve hot, garnished with fresh cilantro, lime wedges, and sliced chili peppers if desired.
