Ingredients
  

1 lb (450g) boneless chicken thighs, cut into thin strips

2 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

2 tablespoons peanut butter

1 tablespoon coconut milk

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon turmeric powder

1 teaspoon ground coriander

½ teaspoon chili powder (adjust for spice preference)

Juice of 1 lime

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

For the Peanut Sauce:

1 cup coconut milk

¾ cup natural peanut butter

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice

1 teaspoon chili paste (e.g., sambal oelek)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine soy sauce, fish sauce, brown sugar, peanut butter, coconut milk, garlic, ginger, turmeric, ground coriander, chili powder, and lime juice. Mix well until smooth.

      - Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 1 hour; overnight is best for maximum flavor.

        Prepare the Peanut Sauce:

          - In a saucepan over medium heat, combine coconut milk and peanut butter. Stir until well combined.

            - Add soy sauce, brown sugar, lime juice, and chili paste. Cook until heated through, stirring frequently. Adjust seasoning to taste if necessary. Keep warm.

              Skewer the Chicken:

                - Preheat your grill or broiler to medium-high heat.

                  - Thread the marinated chicken strips onto the skewers, leaving a little space between each piece for even cooking.

                    Grill the Skewers:

                      - Place the skewers on the preheated grill or under the broiler. Cook for about 3-4 minutes on each side, or until the chicken is cooked through and has nice grill marks.

                        - If using an oven, place them on a baking sheet lined with parchment paper to catch drippings.

                          Serve:

                            - Serve the chicken satay hot with the peanut sauce drizzled or served on the side. Garnish with chopped peanuts and cilantro.

                              - Pair with jasmine rice or a refreshing cucumber salad for the perfect meal.
