2 boneless, skinless chicken breasts

6 cups chicken broth

1 can (13.5 oz) coconut milk

1 tablespoon vegetable oil

1 onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, thinly sliced

2 carrots, julienned

2 cups shiitake mushrooms, sliced

4 ounces rice noodles

2 tablespoons fish sauce

2 tablespoons lime juice

1 tablespoon brown sugar

Fresh cilantro for garnish

Sliced green onions for garnish

Lime wedges for serving

Optional: sliced red chili for heat

Cook the Chicken: In a large pot, bring the chicken broth to a simmer. Add the chicken breasts and cook for about 15-20 minutes or until fully cooked. Remove the chicken, let it cool slightly, then shred it using two forks. Set aside.

    Sauté Aromatics: In the same pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger; sauté until the onion becomes translucent, about 5 minutes.

      Add Vegetables: Stir in the red bell pepper, carrots, and shiitake mushrooms. Cook for another 5 minutes until the vegetables begin to soften.

        Combine Broth: Pour in the coconut milk and return the chicken broth to a simmer. Stir in fish sauce, lime juice, and brown sugar. Adjust seasoning as needed.

          Cook Noodles: Add the rice noodles to the pot and cook according to package instructions until tender, usually about 3-5 minutes.

            Add Chicken: Once the noodles are cooked, add the shredded chicken back to the pot, mixing well to combine all the flavors.

              Serve: Ladle the soup into bowls, garnishing with fresh cilantro, green onions, and lime wedges. Add sliced red chili if desired for heat.
