Ingredients

1 cup shredded Monterey Jack cheese

1 cup cream cheese, softened

1/4 cup diced jalapeños (fresh or pickled)

1/4 cup diced green onions

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional, for extra heat)

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1/2 tsp salt

1/4 tsp black pepper

Oil for frying (such as vegetable or canola)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the shredded Monterey Jack cheese, cream cheese, diced jalapeños, diced green onions, garlic powder, onion powder, and cayenne pepper (if using). Mix well until combined.

Shape the Bites: Using your hands, form the cheese mixture into small balls or patties (about the size of a golf ball). Place them on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm them up.

Set Up Breading Station: In one shallow dish, place the flour mixed with salt and black pepper. In a second dish, whisk the eggs until well beaten. In a third dish, add the breadcrumbs.

Bread the Bites: Remove the cheese balls from the refrigerator. Roll each ball first in the flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Make sure they are well-coated for a crispy exterior.

Fry the Bites: In a deep skillet or fryer, heat oil over medium heat (about 350°F/175°C). Carefully place a few rattlesnake bites in the hot oil at a time, being sure not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to absorb excess oil.

Serve: Serve the rattlesnake bites warm with your favorite dipping sauce, such as ranch dressing, spicy mayo, or a tangy chipotle sauce. Enjoy!
