Ingredients

1 and ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

2 large eggs

1 cup pineapple juice (freshly squeezed or canned)

1 teaspoon vanilla extract

½ cup crushed pineapple, drained

1 teaspoon pineapple zest (optional)

Powdered sugar, for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.

Add Eggs: Add the eggs one at a time, beating well after each addition.

Combine Wet Ingredients: Mix in the pineapple juice and vanilla extract until well combined.

Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Add Pineapple: Fold in the crushed pineapple and pineapple zest (if using) to the batter gently.

Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Finish and Serve: Once cooled, dust the cake with powdered sugar if desired. Slice and serve as is or with a dollop of whipped cream for extra indulgence.
