12 oz cheese tortellini (fresh or frozen)

1 lb ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) diced tomatoes with green chilies

1 cup chicken broth

1 cup corn (canned or frozen)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

In a large pot over medium heat, add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes, until the onion becomes translucent and fragrant.

      Sprinkle the taco seasoning over the meat mixture and stir well to combine, cooking for another 1-2 minutes.

        Pour in the diced tomatoes (including juices), chicken broth, corn, and black beans. Stir to mix everything together.

          Bring the mixture to a boil, then reduce to a simmer and add the tortellini. Cover the pot and cook for about 8-10 minutes, or until the tortellini is cooked through, stirring occasionally.

            Once the tortellini is tender, remove the pot from heat and stir in the shredded cheddar cheese until melted.

              Lastly, mix in the sour cream, adjusting the quantity to your liking, to create a creamy texture. Season with salt and pepper as needed.

                Serve hot, garnished with chopped fresh cilantro for an extra burst of flavor!
