Ingredients
  

1 pound ground beef or turkey

1 packet taco seasoning

1 cup cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup ranch dressing

1 cup black beans, drained and rinsed

1/2 cup corn, drained

1/4 cup green onions, chopped

1 package of mini phyllo pastry cups

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a skillet over medium heat, cook the ground beef or turkey until browned, breaking apart with a spatula. Drain any excess fat.

      Add the taco seasoning to the skillet along with 1/4 cup of water. Stir well, cooking for about 5 minutes until the seasoning thickens. Remove from heat and let it cool slightly.

        In a mixing bowl, combine the softened cream cheese, ranch dressing, shredded cheddar cheese, black beans, corn, and chopped green onions until fully mixed.

          Gently fold in the cooked taco meat into the cheese mixture until well integrated.

            Place the mini phyllo pastry cups on a baking sheet. Spoon the taco and cheese mixture generously into each cup.

              Bake in the oven for 10-12 minutes or until the cups are golden and the filling is heated through.

                Once baked, remove from the oven and let them cool for a few minutes.

                  Garnish with fresh cilantro, if desired, before serving.
