In a medium bowl, combine ground turkey, honey, minced garlic, soy sauce, rice vinegar, and grated ginger. Mix well until all ingredients are fully incorporated.
Heat sesame oil in a large skillet over medium heat. Once hot, add the seasoned ground turkey mixture.
Cook, breaking apart the turkey with a wooden spoon, for about 7-10 minutes, or until the meat is fully cooked and no longer pink.
Taste and season with salt and pepper as needed. If you prefer a deeper flavor, let it cook for an additional 2-3 minutes until it becomes slightly caramelized.
Once cooked, remove from heat and let it cool for a minute.
Serve over a bed of cooked rice or quinoa, and garnish with sliced green onions on top.
