2 medium-sized sweet potatoes (about 1 pound), peeled and cubed

1 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, softened

3 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp salt

1 cup evaporated milk

1 pre-made pie crust (9-inch, optional for homemade)

Whipped cream (for serving, optional)

Instructions
 

Begin by preheating your oven to 350°F (175°C). If you're using a frozen pie crust, let it thaw while you prepare the filling.

    In a large pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook until tender, approximately 15-20 minutes. Drain and let cool slightly.

      In a large mixing bowl, mash the cooked sweet potatoes until smooth. You can use a potato masher or a food processor for a ultra-smooth texture.

        Add the softened butter to the mashed sweet potatoes and mix until well combined. Then, blend in the granulated sugar and brown sugar until the mixture is fluffy.

          Beat in the eggs one at a time, then stir in the vanilla extract, cinnamon, nutmeg, and salt. Gradually mix in the evaporated milk until fully incorporated.

            Pour the sweet potato filling into the prepared pie crust. Smooth the top with a spatula.

              Bake in the preheated oven for 55-60 minutes or until the pie is set and a knife inserted in the center comes out clean.

                Allow the pie to cool at room temperature for at least 2 hours before slicing. This will help the filling to firm up.

                  Serve slices of sweet potato pie with a dollop of whipped cream if desired.
