Sweet Potato Casserole with Marshmallows

4 medium sweet potatoes, peeled and cubed

½ cup brown sugar

¼ cup white sugar

½ cup unsalted butter, melted

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

2 eggs, beaten

2 cups mini marshmallows

½ cup pecans, coarsely chopped (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring water to a boil and add the cubed sweet potatoes. Cook until tender, about 15-20 minutes. Drain and let cool slightly.

      In a large mixing bowl, mash the cooked sweet potatoes until smooth.

        Add brown sugar, white sugar, melted butter, vanilla extract, ground cinnamon, nutmeg, salt, and beaten eggs to the mashed sweet potatoes. Mix until everything is well combined and smooth.

          Pour the sweet potato mixture into a greased 9x13-inch baking dish and spread it out evenly.

            Sprinkle mini marshmallows evenly over the top of the sweet potato mixture. If using, scatter the chopped pecans on top of the marshmallows for added crunch.

              Bake in the preheated oven for 30 minutes, or until the marshmallows are golden brown and puffed.

                Remove from the oven and allow to cool slightly before serving to let the marshmallows set a bit.
