Ingredients
  

1 cup sugar

1/2 cup water

1/2 cup rice vinegar

2 tablespoons chili garlic sauce (adjust for heat preference)

2 teaspoons cornstarch

2 tablespoons soy sauce

1 teaspoon minced garlic

1 teaspoon minced ginger

1 teaspoon sesame oil (optional)

1/4 teaspoon salt

Instructions
 

In a medium saucepan, combine the sugar, water, and rice vinegar. Stir over medium heat until the sugar has completely dissolved.

    Add the chili garlic sauce, minced garlic, minced ginger, and salt to the saucepan. Stir well to combine.

      In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry.

        Bring the sauce to a gentle simmer and then add the cornstarch slurry to the saucepan, stirring continuously. This will thicken the sauce.

          Continue to simmer for 2-3 minutes until the sauce has thickened to your desired consistency.

            Stir in the soy sauce and sesame oil (if using) and remove from heat. Allow the sauce to cool.

              Once cooled, transfer the sauce to a clean jar or container for storage. It can be kept in the refrigerator for up to 2 weeks.
