1 cup orzo pasta

2 cups vegetable broth

1 cup sun-dried tomatoes, chopped (in oil, drained)

8 oz Boursin cheese (garlic & herb flavor)

1 cup fresh spinach, chopped

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Stir in the orzo and cook for about 8-10 minutes, or until al dente. Drain any excess liquid and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.

        Combine Ingredients: In a large mixing bowl, combine the cooked orzo, sautéed vegetables, Boursin cheese, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly distributed.

          Prepare for Baking: Transfer the mixture to a greased 9x13 inch baking dish. Top evenly with mozzarella and Parmesan cheeses.

            Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
