Ingredients
  

12 oz cheese tortellini

1 cup sun-dried tomatoes, chopped (packed in oil for extra flavor)

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/2 cup mozzarella balls, halved (or cubed, if preferred)

1/4 cup fresh basil, chopped

1/4 cup red onion, finely diced

1/4 cup Parmesan cheese, grated

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Optional: Red pepper flakes for a kick

Instructions
 

Cook Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using). Set aside.
