Ingredients

12 oz spaghetti

2 cups fresh cherries, pitted and halved

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

Salt and pepper to taste

Instructions

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Sauté the Cherries and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute, until fragrant.

Add the Fruits: Stir in halved cherries and cherry tomatoes, cooking for about 4-5 minutes, until they start to soften and release their juices.

Combine the Spaghetti: Add the drained spaghetti to the skillet. Toss to combine with the cherry and tomato mixture.

Adjust the Sauce: Gradually pour in the reserved pasta water, a little at a time, until the desired sauce consistency is reached. Stir in the red pepper flakes, salt, and pepper.

Finish with Basil and Cheese: Remove from heat and fold in the fresh basil. If using, sprinkle with grated Parmesan cheese for added flavor.

Serve: Plate the spaghetti, garnishing with extra basil leaves and a drizzle of olive oil if desired.
