1 pound flank steak, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 green bell pepper, diced

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded provolone cheese

1 cup shredded mozzarella cheese

1 large loaf of crusty bread (like ciabatta or baguette)

2 tablespoons fresh parsley, chopped

1 egg, beaten (for egg wash)

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened, then stir in the minced garlic and cook for another minute.

    Cook the Steak: Add the thinly sliced flank steak to the skillet. Sprinkle in the smoked paprika, salt, and pepper. Cook for about 5-7 minutes until the steak is browned and cooked to your desired doneness. Remove from heat and allow to cool slightly.

      Mix the Cheeses: In a bowl, combine the provolone and mozzarella cheeses with the cooked steak and vegetable mixture. Stir in the chopped parsley for added freshness.

        Prepare the Bread: Preheat your oven to 375°F (190°C). Carefully slice the loaf of bread in half lengthwise, creating a pocket for the filling. Hollow out a bit of the inside of the bread if needed, to make room for the filling.

          Stuff the Bread: Generously fill each side of the bread with the steak and cheese mixture, pressing down gently to fit it in. Close the bread halves together.

            Add the Egg Wash: Brush the top of the stuffed bread with the beaten egg to give it a beautiful golden crust in the oven.

              Bake: Place the stuffed bread on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes until the bread is crispy and the cheese is melted and bubbly.

                Cool and Serve: Remove from the oven and let it cool for a few minutes before slicing. Serve warm, and enjoy the cheesy steak goodness!
