Ingredients

4 sole fillets

1 cup scallops, chopped

1 cup lump crabmeat, drained

1/2 cup breadcrumbs

1/4 cup cream cheese, softened

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 clove garlic, minced

1 teaspoon lemon juice

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

2 tablespoons olive oil

Lemon wedges, for serving

Instructions

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the chopped scallops and crabmeat.

Add the breadcrumbs, cream cheese, mayonnaise, Dijon mustard, minced garlic, lemon juice, parsley, and season with salt and pepper. Mix until well combined.

Lay the sole fillets on a clean surface and evenly distribute the seafood mixture among the fillets, placing it on one side of each fillet.

Carefully fold the fillets over the filling to create a neat pocket.

Heat olive oil in a large skillet over medium heat. Cook the stuffed fillets for about 3-4 minutes on each side, until golden brown.

Transfer the fillets to a baking dish and bake in the preheated oven for an additional 10 minutes, or until the fish flakes easily with a fork.

Remove from the oven and let rest for a few minutes before serving.
