4 salmon fillets (about 6 ounces each)

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Zest of 1 lemon

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the chopped spinach, ricotta cheese, garlic powder, onion powder, nutmeg, salt, pepper, and lemon zest. Mix until well incorporated.

      Lay the salmon fillets skin-side down on a clean surface. Gently press down to flatten them slightly.

        Evenly spread the spinach and ricotta mixture over each salmon fillet. Be careful not to overfill.

          Starting from one end, tightly roll each fillet into a pinwheel shape, securing the filling inside.

            Use kitchen twine or toothpicks to secure the edges of the pinwheels, if necessary.

              In an oven-safe skillet, heat the olive oil over medium heat. Carefully place the pinwheels in the skillet, searing for about 2-3 minutes on each side until golden brown.

                Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

                  Remove from the oven, let it rest for a couple of minutes, then remove any twine or toothpicks.

                    Slice the pinwheels into circles and arrange them on a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side.
