Stuffed Pork Crown Roast

1 (6-8 bone) pork crown roast

2 cups day-old bread, cubed

1 cup apple, diced

1 cup onion, finely chopped

½ cup dried cranberries

½ cup pecans, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon rosemary, chopped

1 teaspoon salt

½ teaspoon black pepper

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon Dijon mustard

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the diced apple, dried cranberries, and pecans. Cook for another 3-4 minutes until the apples are slightly softened.

        In a large mixing bowl, combine the sautéed mixture with the cubed bread, thyme, rosemary, salt, and black pepper. Stir to mix well.

          Slowly pour in the chicken broth while stirring, until the mixture is moistened but not soggy.

            Carefully season the pork roast with salt, black pepper, and Dijon mustard, including inside the bone area.

              Pack the stuffing mixture into the center of the crown roast tightly.

                Place the stuffed pork crown roast on a roasting rack in a baking dish. Tent with aluminum foil to prevent over-browning.

                  Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).

                    Remove the foil for the last 20-30 minutes to allow the roast to brown beautifully.

                      Once done, let the pork rest for 15 minutes before slicing.

                        Serve with any remaining stuffing alongside the sliced roast.
