Ingredients
  

1 lb ground turkey or beef

1 large onion, chopped

2 cloves garlic, minced

2 bell peppers (any color), diced

1 can (14.5 oz) diced tomatoes, with juice

4 cups vegetable or chicken broth

1 cup cooked rice or quinoa

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.

    Add the minced garlic and cook for another minute until fragrant, stirring frequently.

      Stir in the ground turkey or beef, breaking it up as it cooks until browned and cooked through, approximately 7-10 minutes. Drain excess fat if needed.

        Add the diced bell peppers to the pot and sauté for about 3-4 minutes until they soften slightly.

          Pour in the diced tomatoes (with their juices) and the vegetable or chicken broth.

            Stir in the cooked rice or quinoa, Worcestershire sauce, dried oregano, basil, paprika, salt, and pepper. Bring the mixture to a boil.

              Once boiling, reduce the heat to a simmer and let it cook for 20-25 minutes to allow the flavors to meld together.

                Taste and adjust seasoning as needed. If you prefer a thicker soup, let it simmer for an additional 5-10 minutes.

                  Serve hot, garnished with fresh chopped parsley for added flavor and color.
