1.5 lbs flank steak

1 cup cooked quinoa

1 cup black beans, rinsed and drained

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

1 cup shredded cheese (cheddar or pepper jack)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Lay the flank steak flat on a cutting board and carefully slice it horizontally to create a pocket, ensuring not to cut all the way through.

      In a skillet, heat olive oil over medium heat. Sauté the diced onion and bell pepper until softened, about 5 minutes.

        Add minced garlic to the skillet and cook for an additional minute until fragrant.

          In a large bowl, combine the sautéed onion and bell pepper, cooked quinoa, black beans, smoked paprika, cumin, chili powder, and half of the cheese. Mix well to combine.

            Generously stuff the flank steak with the quinoa mixture, spreading it evenly inside the pocket.

              Secure the open sides of the flank steak with toothpicks or kitchen twine to keep the filling from spilling out.

                Season the outside of the steak with salt and pepper, then place it in a baking dish.

                  Bake in the preheated oven for 25-30 minutes, or until the meat reaches an internal temperature of 135°F (57°C) for medium-rare or 145°F (63°C) for medium.

                    In the last 5 minutes of cooking, sprinkle the remaining cheese on top of the steak to melt.

                      Once cooked, remove the steak from the oven and let it rest for 10 minutes before slicing.

                        Carefully cut the steak into slices, exposing the colorful filling, and garnish with fresh cilantro.
