1 lb chicken breast, diced

1 cup cooked rice (white or brown)

1 cup corn kernels (fresh or frozen)

1/2 cup cotija cheese, crumbled

1/4 cup mayonnaise

2 tbsp lime juice

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Chicken: In a bowl, combine diced chicken with chili powder, smoked paprika, garlic powder, salt, and black pepper. Toss to coat evenly.

    Cook the Chicken: Heat a skillet over medium-high heat and add a drizzle of oil. Add the seasoned chicken and cook for about 6-8 minutes, or until the chicken is cooked through and golden brown. Remove from heat.

      Prepare the Corn: In the same skillet, add the corn kernels and cook for about 3-4 minutes until they are slightly charred. Remove from heat and set aside.

        Make the Sauce: In a small bowl, mix together the mayonnaise, lime juice, and a pinch of salt. Stir well until fully combined.

          Assemble the Bowl: In serving bowls, layer the cooked rice at the bottom. Top with cooked chicken, charred corn, and sprinkle with cotija cheese.

            Drizzle the Sauce: Drizzle the lime mayonnaise over the top of the bowl.

              Garnish: Add freshly chopped cilantro on top and serve with lime wedges on the side.
