2 cups cooked white or brown rice

2 cups shredded rotisserie chicken

1 cup corn kernels (fresh or frozen)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup crumbled feta cheese (or cotija cheese)

¼ cup fresh cilantro, chopped

1 lime, juiced

½ avocado, diced (optional)

Sour cream or Greek yogurt (for garnish, optional)

Instructions
 

Prepare the Rice: If you haven't already, cook the rice according to package instructions and set aside.

    Sauté the Corn: In a skillet over medium heat, add olive oil. Once hot, add the corn and sauté for about 5-7 minutes until it begins to caramelize slightly.

      Season the Corn: Sprinkle in the smoked paprika, chili powder, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for an additional 2 minutes. Remove from heat.
