Ingredients
  

2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar

1/4 cup water

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract (optional)

Instructions
 

In a medium saucepan, combine the sliced strawberries, sugar, and water. Stir gently to combine.

    Over medium heat, bring the mixture to a simmer, stirring frequently until the sugar dissolves and the strawberries begin to soften (about 5-7 minutes).

      Once the strawberries are soft, add the lemon juice (and vanilla extract if using).

        Continue to simmer for another 10-15 minutes, allowing the mixture to thicken slightly.

          Remove from heat and let it cool for a few minutes.

            Pour the syrup into a fine mesh strainer placed over a bowl to separate the liquid from the strawberry pulp. Use the back of a spoon to press the strawberries and extract as much liquid as possible.

              Store the syrup in an airtight container in the refrigerator for up to two weeks.
