1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup fresh strawberries, pureed

½ cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add in the egg and vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

          Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined.

            Fold in the pureed strawberries gently, ensuring an even distribution without over-mixing.

              Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Flatten each cookie slightly with the back of a fork or your palm to help them spread evenly.

                  Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

                    Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

                      Once cooled, dust the cookies with powdered sugar for an extra touch of sweetness and presentation.
