Ingredients

1 ½ cups crushed graham crackers (about 10 full sheets)

⅓ cup granulated sugar

½ cup unsalted butter, melted

2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1 cup sweetened condensed milk

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Whipped cream, for garnish

Fresh mint leaves, for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until the crumbs are well coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust. Bake at 350°F (175°C) for 10 minutes, then remove and let cool completely.

Make the Filling: In another bowl, combine the sliced strawberries and 1 tablespoon of the sugar. Let them sit for about 10 minutes to release some juice. In a separate large mixing bowl, whip the heavy cream until soft peaks form. Carefully fold in the sweetened condensed milk, lemon juice, vanilla extract, and the remaining sugar until well blended and smooth.

Combine Strawberries and Filling: Gently fold the macerated strawberries, along with any juices, into the whipped cream mixture. Be careful not to deflate the whipped cream too much.

Assemble the Pie: Pour the strawberry filling into the cooled graham cracker crust. Spread it evenly, smoothing the top with a spatula. Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.

Serve: Once the pie is fully chilled and set, slice into wedges and serve each piece with a dollop of whipped cream and a sprig of fresh mint for garnish.
