2 cups fresh strawberries, hulled and halved

1 cup plain Greek yogurt

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Begin by placing the fresh strawberries in a blender or food processor. Blend until smooth. If you prefer some texture, you can pulse them a few times to leave small chunks.

    In a mixing bowl, combine the blended strawberries with plain Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Mix well until all ingredients are thoroughly combined.

      Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.

        Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

          If you don't have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer. Stir the mixture every 30 minutes with a fork for about 3-4 hours until it is completely frozen but still creamy.

            Once it's done, let it sit at room temperature for about 5 minutes before serving, to soften slightly.

              Scoop the frozen yogurt into bowls and garnish with fresh strawberries or mint leaves if desired.
