1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup freeze-dried strawberries, crushed

½ cup rolled oats

½ cup crushed graham crackers

1/2 cup shredded coconut (optional)

½ teaspoon almond extract (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the egg and vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

          Gently fold in the crushed freeze-dried strawberries, rolled oats, crushed graham crackers, and shredded coconut (if using). Stir until evenly distributed in the dough.

            Using a tablespoon, scoop out dough balls and place them onto the prepared baking sheet, leaving some space between them as they will spread while baking.

              Press each cookie slightly to flatten and sprinkle a little extra crushed freeze-dried strawberries and graham crackers on top for added crunch.

                Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

                  Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
