1 cup fresh strawberries, hulled and diced

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/2 cup mini chocolate chips

1/4 cup unsalted butter, melted

Pinch of salt

Whipped cream for garnish (optional)

Instructions
 

In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk to blend until smooth and creamy. Set aside.

    In another bowl, mix the graham cracker crumbs, melted butter, mini chocolate chips, and a pinch of salt until well combined. This will create the crunchy base for your bites.

      Line a mini muffin tin with paper liners or grease using cooking spray.

        Press a spoonful of the graham cracker mixture into the bottom of each mini muffin cup, packing it tightly to form a crust. Bake in a preheated oven at 350°F (175°C) for about 5-7 minutes until slightly golden. Let cool for a few minutes.

          Once the crusts are cool, spoon the cream cheese mixture over the top of each crust, filling them about three-quarters full.

            Top each cheesecake bite with diced strawberries, pressing them gently into the cream cheese mixture.

              Chill the bites in the refrigerator for at least 2 hours to set.

                Once set, carefully remove the bites from the muffin tin and place them on a serving platter.

                  Optional: Top each bite with a dollop of whipped cream for an extra touch of sweetness.
