4 chicken thighs, boneless and skinless

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 cup all-purpose flour

1/2 cup cornstarch

Salt and pepper to taste

1 cup sticky BBQ sauce (homemade or store-bought)

4 brioche burger buns

1 cup coleslaw (pre-packaged or homemade)

Marinate the Chicken: In a medium bowl, combine buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Add chicken thighs to the mixture, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

    Prepare the Coating: In a separate bowl, mix the flour, cornstarch, salt, and pepper. This will be the crispy coating for your chicken.

      Heat the Oil: In a deep skillet or fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). To check if the oil is ready, drop a bit of the flour mixture into the oil; it should sizzle and bubble up.

        Coat the Chicken: Remove chicken thighs from the buttermilk marinade one at a time, allowing excess to drip off, then dredge each thigh in the flour mixture, ensuring an even coating. Shake off any excess flour.

          Fry the Chicken: Carefully place the coated chicken thighs into the hot oil. Fry in batches to avoid overcrowding, cooking for about 5-7 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

            Apply Sticky Sauce: Once all chicken is fried and drained, toss the hot chicken in sticky BBQ sauce until completely covered.

              Assemble the Burger: Lightly toast the brioche buns. On the bottom half of each bun, place a generous dollop of coleslaw, followed by the sticky chicken thighs. Top with pickles and garnish with fresh cilantro. Finally, place the top half of the bun to complete your burger.
