4 chicken thighs (bone-in, skin-on for extra flavor)

1 cup apricot preserves

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

3 cloves garlic, minced

1 teaspoon grated fresh ginger

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1 tablespoon vegetable oil

Fresh chopped parsley or cilantro for garnish

Instructions
 

Marinate the Chicken: In a large bowl, mix together apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, grated ginger, black pepper, and red pepper flakes. Reserve about 1/4 cup of the marinade for basting. Add the chicken thighs to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken thighs, skin-side down. Sear for about 5-7 minutes until the skin is crispy and golden brown.
