2 cups white rice (long-grain or basmati)

4 cups chicken or vegetable broth (low-sodium)

1 stick (1/2 cup) unsalted butter

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground black pepper

Salt to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or saucepan, melt the stick of butter over medium heat.

    Add the finely chopped onion to the skillet and sauté for about 3-4 minutes, or until the onions are translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn the garlic.

        Add the rice to the skillet, stirring to coat the grains in the buttery mixture. Cook for about 2-3 minutes until the rice is slightly toasted.

          Pour in the chicken or vegetable broth and season with ground black pepper and salt. Stir to combine.

            Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let the rice simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is tender.

              Once the rice is cooked, remove it from heat and let it sit, covered, for an additional 5 minutes to steam.

                Fluff the rice gently with a fork and sprinkle with chopped parsley before serving.
