2 sirloin steaks (about 8 ounces each)

Salt and pepper, to taste

1 tablespoon olive oil

4 slices of ciabatta bread

1 cup arugula

½ red onion, thinly sliced

1 medium tomato, sliced

½ cup mayonnaise

2 garlic cloves, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Prepare the Garlic Aioli: In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and Dijon mustard. Stir until well combined. Set aside in the refrigerator to allow flavors to meld.

    Season the Steaks: Pat the sirloin steaks dry with a paper towel. Season both sides generously with salt and pepper.

      Cook the Steaks: Heat olive oil in a large skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Use a meat thermometer for precise cooking if needed (130°F for medium-rare).

        Rest the Meat: Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes. This helps retain the juices.

          Toast the Bread: While the steaks are resting, preheat a separate pan or grill over medium heat. Lightly toast the ciabatta slices until golden brown.

            Assemble the Sandwich: Once the steaks have rested, slice them thinly against the grain. Start layering by spreading a generous amount of garlic aioli on the bottom of each toasted ciabatta slice. Add a handful of arugula, followed by the sliced steak, onions, and tomatoes.
