1 cup ricotta cheese

Instructions
 

Prep the Steak: Lay the flank steak flat on a cutting board. Use a meat mallet to pound it thin if not already done. Season both sides with salt and pepper.

    Make the Filling: In a bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, sun-dried tomatoes, minced garlic, and Italian seasoning. Mix well until all ingredients are evenly incorporated.

      Assemble the Pinwheels: Spread the cheese and spinach mixture evenly over the steak, leaving a small border at the edges. Starting from one end, carefully roll the steak tightly into a log.
