For the Spinach Fettuccine:

2 cups all-purpose flour

2 large eggs

1 cup fresh spinach, blanched and pureed

1/2 teaspoon salt

Water, as needed

For the Lobster Ravioli:

1 pre-made lobster ravioli (store-bought or homemade)

For the Mussels:

1 pound fresh mussels, cleaned and debearded

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup white wine

Fresh parsley, chopped, for garnish

For the Meat Sauce:

1 pound ground beef or turkey

1 onion, chopped

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

Make the Spinach Fettuccine:

    - In a mixing bowl, combine the flour and salt. Make a well in the center, and add the eggs and spinach puree.

      - Gradually mix the flour into the wet ingredients until a dough forms. Knead on a floured surface for about 8-10 minutes. Wrap in plastic wrap and let it rest for 30 minutes.

        Prepare the Meat Sauce:

          - In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.

            - Add the ground meat, cooking until browned. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer on low heat for 20 minutes.

              Cook the Mussels:

                - In a separate pot, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.

                  - Pour in the white wine and add mussels. Cover and cook for about 5-7 minutes until the mussels open. Discard any that do not open. Sprinkle with fresh parsley.

                    Roll and Cook the Fettuccine:

                      - Roll out the rested dough into thin sheets and cut into fettuccine strips. Cook in boiling salted water for 2-3 minutes until al dente.

                        - Drain and keep warm.

                          Assemble the Dish:

                            - Plate a bed of spinach fettuccine and top it with the meat sauce. Add a few lobster ravioli on top, garnishing with sautéed mussels and their broth.

                              Serve and Enjoy:
