Spinach Dip Bites

1 cup fresh spinach, chopped

1 cup cream cheese, softened

½ cup sour cream

¼ cup mayonnaise

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

¼ teaspoon garlic powder

¼ teaspoon onion powder

Salt and pepper to taste

1 package of phyllo pastry sheets (or puff pastry)

Olive oil spray or melted butter for brushing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the chopped spinach, cream cheese, sour cream, mayonnaise, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until it forms a creamy, cohesive filling.

      If using phyllo pastry, cut the sheets into rectangles large enough to fill your muffin tin cups, about 4x4 inches. If using puff pastry, roll it out and cut it into similar squares.

        Lightly grease a mini muffin tin with olive oil spray or brush with melted butter. Place one square of pastry in each muffin tin cup, pressing down gently to form a small cup.

          Fill each pastry cup with a generous spoonful of the spinach dip filling, ensuring not to overfill.

            If you have leftover pastry, you can top each filled cup with a small piece of pastry for an extra crunchy bite!

              Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden brown and crispy.
