2 pounds ripe tomatoes, chopped

1 cup sugar

1/2 cup apple cider vinegar

1 onion, finely chopped

4 cloves garlic, minced

1-2 jalapeño peppers, finely chopped (adjust for spice)

1 teaspoon mustard seeds

1 teaspoon smoked paprika

1/2 teaspoon ground black pepper

Salt to taste

Instructions
 

In a large saucepan, combine the chopped tomatoes, onions, and garlic over medium heat. Cook for about 10 minutes, stirring occasionally until the tomatoes start to break down and release their juices.

    Add the chopped jalapeños, sugar, and apple cider vinegar to the saucepan. Stir well to combine all ingredients.

      Mix in the mustard seeds, smoked paprika, black pepper, and a pinch of salt. Bring the mixture to a gentle boil, then reduce the heat to low.

        Simmer the jam uncovered for 45-60 minutes, stirring occasionally to prevent sticking, until the mixture thickens to your desired jam consistency.

          Taste and adjust seasoning as necessary, adding more salt or sugar if desired.

            Once the jam has thickened, carefully pour it into sterilized jars while hot, leaving some headspace. Seal the jars with lids.

              Allow the jars to cool completely at room temperature before storing them in the fridge or pantry.
