Spicy Coconut Curry Ramen

Ingredients
  

2 packs of instant ramen noodles (discard seasoning)

1 can (14 oz) of coconut milk

2 cups vegetable broth (or chicken broth)

2 tablespoons red curry paste

1 tablespoon soy sauce

1 tablespoon brown sugar

1 teaspoon turmeric powder

1 teaspoon garlic powder

1 tablespoon ginger, grated

1 cup mushrooms, sliced (shiitake or button)

1 cup baby spinach

1 red bell pepper, thinly sliced

1 cup bean sprouts

2 green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Chili flakes or fresh chili (to taste)

Instructions
 

In a large pot, heat a splash of oil over medium heat. Add the red curry paste and sauté for about 1 minute until fragrant.

    Pour in the coconut milk and vegetable (or chicken) broth. Stir until the curry paste is fully blended.

      Add the soy sauce, brown sugar, turmeric powder, garlic powder, and grated ginger. Mix well and let the mixture simmer for about 5 minutes.

        While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.

          To the simmering broth, add the mushrooms and bell pepper. Cook for another 5 minutes until softened.

            Add the baby spinach and bean sprouts to the pot. Stir for 1-2 minutes until the spinach is wilted.

              Taste the broth and adjust seasonings if needed, adding chili flakes or fresh chili for extra heat.

                Divide the cooked ramen noodles into serving bowls. Pour the hot spicy coconut curry broth over the noodles.

                  Garnish with chopped green onions and fresh cilantro. Serve with lime wedges for a zesty kick.
