Spicy Chipotle Breakfast

4 medium corn tortillas

3 large eggs

1/2 cup black beans, drained and rinsed

1 ripe avocado, diced

1/4 cup feta cheese, crumbled

2 tablespoons chipotle sauce (adjust based on spice preference)

1/4 cup diced red onion

1 tablespoon fresh cilantro, chopped

Salt and pepper to taste

Olive oil for cooking

Prepare the Tortillas: In a skillet over medium heat, lightly warm the corn tortillas for about 30 seconds on each side until they are soft and pliable. Wrap them in a clean kitchen towel to keep them warm.

    Cook the Eggs: In a medium bowl, whisk the eggs together with a pinch of salt and pepper. Heat a teaspoon of olive oil in the skillet over medium heat, then pour in the eggs. Allow the eggs to cook without stirring for about 1-2 minutes until they begin to set, then gently scramble them until fully cooked (around 2 more minutes).

      Add Chipotle Sauce: Once the eggs are cooked, stir in the chipotle sauce into the scrambled eggs, mixing well to combine and allow the flavors to meld. Remove from heat.

        Assemble the Tacos: On each warmed tortilla, distribute the black beans evenly. Top the beans with a generous scoop of chipotle scrambled eggs.

          Add Toppings: Sprinkle crumbled feta cheese, diced avocado, and diced red onion over the egg mixture. Finish with a sprinkle of fresh cilantro for garnish.

            Serve: Serve immediately warm with additional chipotle sauce on the side, if desired.
