Ingredients

12 large fresh jalapeño peppers

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup crumbled feta cheese

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

½ tsp cayenne pepper (adjust to taste)

1 cup breadcrumbs (panko for extra crunch)

Olive oil for drizzling

Fresh cilantro, chopped (for garnish, optional)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Cut the jalapeños in half lengthwise and remove the seeds and membranes (use gloves for safety, as they can be spicy).

In a mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled feta, minced garlic, smoked paprika, cumin, and cayenne pepper. Mix until fully combined and creamy.

Spoon the cheese mixture generously into each jalapeño half, filling them to the top.

Place the stuffed jalapeños on the prepared baking sheet.

Sprinkle the breadcrumbs evenly over the stuffed jalapeños. Drizzle a little olive oil over the breadcrumbs to help them brown.

Bake in the preheated oven for about 20-25 minutes or until the jalapeños are tender and the breadcrumbs are golden brown.

Remove from the oven and let cool for a few minutes, then garnish with chopped cilantro if desired.

Serve warm as an appetizer and enjoy the spicy cheesy goodness!
