12 oz spaghetti

2 cups fresh spinach, roughly chopped

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and reserve a cup of pasta water.

    Sauté the Garlic and Sun-Dried Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sun-dried tomatoes and cook for another 2-3 minutes until they soften.

      Make the Cream Sauce: Pour in the heavy cream and sprinkle the dried basil, red pepper flakes, and a pinch of salt and pepper. Stir well and let it simmer for about 3-5 minutes, allowing the sauce to thicken slightly.

        Add the Spinach: Toss in the chopped spinach and cook for an additional 2-3 minutes until the spinach wilts and incorporates into the sauce.

          Combine with Spaghetti: Add the drained spaghetti to the skillet, tossing to coat the noodles evenly in the sauce. If the sauce is too thick, gradually incorporate some of the reserved pasta water until the desired consistency is reached.

            Finish with Cheese: Stir in the grated Parmesan cheese and mix until melted and creamy. Adjust seasoning with additional salt and pepper as needed.

              Serve: Plate the spaghetti and garnish with fresh basil leaves for a pop of color and flavor. Enjoy!
