2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1 cup buttermilk, cold

1 tablespoon honey (optional)

Instructions
 

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the chilled butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.

        Make a well in the center of the mixture and pour in the cold buttermilk (and honey if using). Stir gently with a fork until a dough forms; do not overmix.

          Turn the dough out onto a lightly floured surface. Knead the dough gently about 3-4 times until it comes together, ensuring not to overwork it.

            Pat the dough into a rectangle about 1-inch thick. Fold the dough in half and gently roll it out again to 1-inch thick. Repeat this folding and rolling process twice more for an extra flaky result.

              Cut out biscuits using a floured biscuit cutter, pressing straight down without twisting. Place the biscuits on the prepared baking sheet, close together for soft sides.

                Bake in the preheated oven for 12-15 minutes or until golden brown on top.

                  Remove from oven and let cool for a few minutes on a wire rack. Enjoy warm with butter or jam!
